So I would suggest removing the ipv6 stuff for a while and see if things get better for you.
And then also exploring why your ipv6 address is not consistently routable, or not consistently reachable, or whatever else is going wrong with it.
That seems quite worthwhile to figure out. Basically, your computer isn't really online right now ;)
It seems indeed there is something wrong with OVH support of IPv6. I tried few times to test IPv6 on https://bridges.torproject.org/scan/ and just by the time of writing this email, I got both positive and negative results. It is very random because I'm seeing IPv6 connections in nyx.
The IP 2001:41d0:fecf:8900:5ee2:8cff:fe99:f106 corresponds to the router provided by OVH (it is a very crappy one a Zyxel VMG8823-B50B where the interface is so buggy). I'll contact them to solve this issue.
In the mean time, I'll remove IPv6 from torrc.
