The Stable flag isn't relevant for bridges: Tor uses the bridges it is given, regardless of their flags.

Your bridge might have been down or unreachable, or the average stability of *other* bridges might have increased: https://gitweb.torproject.org/torspec.git/tree/dir-spec.txt#n2575
