Unfortunately, no one maintains a Fink package of Tor.  However, there
are macports Tor
http://trac.macports.org/projects/macports/browser/trunk/dports/security/tor/Portfile
and Tor-alpha
http://trac.macports.org/projects/macports/browser/trunk/dports/security/tor-devel/Portfile.

The "expert" tor packages (http://www.torproject.org/download#Dev) will
do what you want from an auto-start at system boot perspective.
