Certainly the messaging parts of XMPP use TLS over TCP. But the actual
VoIP is almost certainly going to be a UDP session using the TCP to
bootstrap.

However, since NATs have broken end-to-end addressing you'll probably
find that gtalk will use a TCP session for VoIP as a last resort to
cope with evil firewalls. So it might all work yet ;)
