 Update: Ignoring the (hypothetical?) privacy issues, my main concern is
 that AMO doesn't allow us to sign extension updates with our airgapped
 signing key (whereas the Chrome web store does).

 However, I have heard that Mozilla will roll out cert pinning for
 addons.mozilla.org in the next couple months or so. Perhaps that will be
 Good Enough.
