So I suppose you have access to some graphical tool, but not command-line access to the system. With such a setup, it is very unlikely that you can set up an onion domain (which is usually called an onion service) for your website without renting an additional VPS. It is a "copy-paste" style guide: it tells you what to do step by step, but doesn't explain what you are doing. would it be the site itself or a copy of the site?
It can be either of them, depending on your setup. I would recommend to set it up to serve the same website from the same source, in order to avoid sync issues.

If you mean a domain you pick up, you basically can't. Onion addresses are generated cryptographically, so you can't choose them. They always are a 56-chars-long string (and only a-z and 2-7 chars are allowed), followed by ".onion". So you can't decide, for example, to use john-doe.onion. You can however generate "vanity addresses", which are onion addresses beginning with a substring of your choice - but it requires some time, increasing exponentially with the length of your substring. Yes. Some hosting providers may set it up and manage it for you, but I don't know any.
