Like every other mailing list on the planet: The same way you signed up, but choose "unsubscribe" instead of subscribe.
Or the List-Unsubscribe header has two options: List-Unsubscribe: https://lists.torproject.org/cgi-bin/mailman/options/tor-mirrors, mailto:tor-mirrors-request@lists.torproject.org?subject=unsubscribe
Or just click the link in the footer of every single message and follow the directions?
